  1. Rinse the paper filter with hot water and tip the water away.
  2. Add the coffee, shake it level and pour twice its weight in water. Wait 40 seconds for the bloom.
  3. Pour slowly in small circles until you reach the full amount of water.
  4. Let it drain. If it ran fast and tastes sour, grind a little finer next time.

French press

  1. Add the coffee and pour in all of the water.
  2. Stir once, put the lid on and wait four minutes.
  3. Skim off the foam on top with a spoon, then press the plunger down gently.
  4. Pour it all out straight away, so it doesn't keep brewing and turn bitter.

  1. Dose the coffee into the basket, level it and tamp firmly and evenly.
  2. Aim for twice the coffee's weight in liquid in the cup, so 18 g in, about 36 g out.
  3. Too fast and sour? Grind finer. Too slow and harsh? Grind coarser.
  4. Change one thing at a time and taste each shot.

  1. Stir the coffee into cold water in a jar until it's all wet.
  2. Cover and leave it in the fridge overnight.
  3. Strain through a paper filter or a fine cloth.
  4. This makes a concentrate. Dilute it about 1 to 1 with water or milk over ice.

We roast in 12 kg batches on Mondays and Thursdays. Orders placed by 10 am on a roast day go out that afternoon, so your coffee is never sitting on a shelf.

How fresh will my coffee be?

Every bag is roasted to order and ships within a day of roasting. Coffee tastes best from about four days to four weeks after its roast date, which is printed on every bag.

Whole bean or ground?

Whole bean keeps its flavour longest. If you don't have a grinder, choose your brewer and we'll grind it to suit on the day it ships.

How much does shipping cost?

A flat $5, free on orders over $45 and on every subscription. Most orders arrive in two to four working days.

Can I change or skip a subscription?

Yes. Change the coffee, size, grind or schedule, skip a delivery or pause, all from your account, up to the day before it roasts.

Do you sell to cafés and offices?

We do. Wholesale customers get brewing equipment advice and staff training. Get in touch from the roastery page.
